It’s not so much that it’s in Latin it’s that the language of the mass is very precise in its meaning and intent. You could have a direct translation to English and retain the Latin meaning of the words and have a valid (authentic) mass.

It’s really the words of the consecration of the host that one needs to pay particular attention to.
