Who are these foreigners cooking and touching the food? Do they have a clean bill of health or are they diseased? Where’s the mystery meat coming from? What is it? Iguana meat?

How are legit eating establishments that have to pay rent and jump through the health inspection hoops going to compete with dudes setting up cooking tents on the side of the road and parking lots and not paying any rent/fees and then disappearing into the night?
